Certified Food Protection Manager was not on site during the inspection. A CFPM was scheduled to come in later today. Kitchen manager during inspection is actively working on certification. Spoke with Brittany, ED, about importance of having a CFPM on site while kitchen is operating. - 2-102.12: (A) The PERSON IN CHARGE shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. (B) This section does not apply to certain types of FOOD ESTABLISHMENTS deemed by the REGULATORY AUTHORITY to pose minimal risk of causing, or contributing to, foodborne illness based on the nature of the operation and extent of FOOD preparation. - V,R |

Ice machine in vestibules were not clean to sight and touch. Maintenance was contacted and will be in today to clean and sanitize ice machines. Deli ham was marked with a prep date of 8/4/24 and a discard date of 9/4/24. No date mark on deli ham and turkey. Watermelon with a date mark of 8/1 was observed in the refrigerator in the dining area. Items with no date marks, and with past date marks were discarded. Ham with wrong date mark was remarked. Education was provided to the PIC and the ED. - 3-501.17 (A-B) (E-G): (A)Except when PACKAGING FOOD using a REDUCED OXYGEN PACKAGING method as specified under § 3-502.12, and except as specified in ¶¶ (E) and (F) of this section, refrigerated, READY-TO -EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days. The day of preparation shall be counted as Day 1.
